Berkshire Pork (Kurobuta)
Berkshire pork is a specialty heritage breed of swine that were bred in the county of Berkshire, England and were brought to the US in the early 1800's. The meat of the Berkshire is a darker pink or light red and is highly marbled which gives it incredible juiciness, tenderness and flavor.
